So the food in Sichuan (Szechuan) is easily one of two of my most favourites cuisines in the whole of China and the other being Xinjiang cooking. The flavours tend to be mixture of strong, pungent flavours that remain in your mouth after the first bite. Being the most sucessful of Chinese cuisines overseas there are various reasons why. Garlic and chilli work hand in hand to deliver tasty and fresh dishes that are sure to satisfy your pallete.
